Seared Tuna Asian Slaw

The inspiration for this Asian Slaw came from my good friends Jeff & Tania (they make great slaws). The thought to add fresh tuna came from El Sitio in Playa Venao, my last visit I ordered a great fresh tuna Asian salad from them. After spending a morning fishing off the Azuero peninsula, we had more tuna than we knew what to do with! We came home with over 20lbs of fresh tuna. After 3 days of finding creative ways to prepare it,  this asain slaw made it to the top of the list. 

 1lb fresh tuna 

½ small green cabbage 
½ small purple cabbage
1 carrot
3 stalks of cilantro
½ packed of rice noodles

Dressing
¼ cup rice vinegar
¼ cup sesame oil
3 tbsp soy sauce

Sesame seeds to garnish 

Pepper to taste

Slaw – Chop cabbage cilantro finely & shred carrots.

Noodles – follow direction on packet. Cook for 5 minutes in boiling water. Cool in cold water.

Tuna steak - seared for 2 minutes on each side and thinly sliced.

Dressing – Wisk rice vinegar, sesame oil & soy sauce together.

Combine slaw, noodles & tuna, pouring dressing gradually. Garnish with sesame seeds and pepper & Cilantro.
