PINK PARTY DIP:  (serves 8)   (prepare in advance)   Ingredients:  

*1/2 medium onion, or bunch of scallions diced
*1 to 3 garlic cloves, minced
*1 Tbsp. oil
*1 16-oz. can beets, drained and chopped
*3/4 cup (1 6-oz. tub) plain yogurt
*2 Tbsp. mayonnaise
*2 tsp. freshly squeezed lemon juice
*Salt and pepper
*Garnish: Dill
In a skillet, heat oil and sauté onions. If desired, add garlic for the final minute of cooking. Let cool. In a food processor, combine beets, onions, garlic (if using), yogurt, 
mayonnaise and lemon juice till coarse. Season to taste with salt and pepper. Garnish and chill.
Serve with crudités, crackers, bread sticks or wedges of pita bread
