Christmas Potato Salad
A classic in every Panamanian Christmas dinner table and a great side dish to go with turkey or jam: 5 large potatoes. Boiled with salt until tender. Drain, cool, pell and cut in little cubes. 1/2 cup of chopped red onion 1/2 cup of chopped celery 2 green apples, chopped into small cubes ( you can leave the skin on if you like) 2 chicken breasts, cooked and cut into strips
1 1/2 cups of mayonnaise
2 teaspoons of dill
1 teaspoon of mustard powder
1/2 of chopped nuts
Salt and pepper
In a big bowl mix the mayonnaise with the salt, pepper, mustard powder and the dill. Then add, little by little the rest of the ingredients ( potatoes, chicken, apples and nuts) make sure you alternate ingredients to make sure they are well mixed with the mayo and spices.
Let it rest in the refrigerator for an hour. Serve chilled in a tray over a bed of fresh green lettuce ...I guarantee your guest will ask for more!
