Vodka and Sechuan Pepper Glazed Chicken

Here is something for our BBQ fans from the Latvian influence of my mother.{mosimage} Ingredients:       1/2 a cup (110g) sugar      1/2 a cup (125ml) lemon juice      1/4 cup (60 ml) TOP QUALITY Vodka                     (as better the ingredients are as better the taste)      1 tablespoon water      1 and 1/2 teaspoon roasted crushed sechuan peppercorns


     1,6 kg chicken

Blini Ingredients:

 

     3 large (about 900g) potatoes. Do not use here sweet potatoes.
     2 Tablespoons peanut oil
     2 small (about 160g) white onions, chopped finely
     3 cloves garlic, crushed
     1 and 1/2 cups self raising flour
     2 teaspoons sugar
     2 eggs, beaten lightly
     1 and 1/2 cups (375ml) milk

How to do:
 
     Combine sugar, juice, vodka, water and pepper in small pan.
     Boil uncovered, for about 5 minutes, or until slightly thickens,
     Divide glaze into 2 similar portions.
     Place chicken on roasting rack or basket,
     Cook in covered BBQ, using indirect medium heat, for 1 hour .
     Brush chicken with one half of the glaze,
     Cook 20 minutes more or chicken is nice browned all over.
     Chicken must be very tender, test with skewer or meat fork.
     Just before serving brush in/over the other half of the glaze.
 
How to do Blini:

     Boil, steam or microwave potatoes until tender, drain, mash.
     Heat oil in large pan, add onion and garlic,
     Cook, stirring until onion is soft.
     Combine mashed potatoes and onion mixture in large bowl
     With flour, sugar, eggs and milk.
     Cook, (1/4 cup measures, flattened like a burger) potatoe mixture
     On hot oiled BBQ plate (not grill) until browned both sides
     And cooked through.
 
How to Serve:

    Serve hot blinis with hot chicken.
     Lovely fresh mixed green salad and a good lager beer and an
     Icecold vodka  goes well with it.
 
Tips:

     If you like you can cut chicken into portions (about 10) before
     Brushing in/over the second half of glaze. It's a great party dish.
 
     You can use blinis for 100's of other occasions:
     By example: Blinis with cream cheese and jam,
                            Blinis with smoked salmon and joghurt,
                            Blinis with Parma ham and melon,
                            Blinis with blue cheese, radiccio and walnuts,
                            Blinis with  - o.k. - be creative by yourself.
