Mango Bread
This recipe from Diana Rattray was sent in by Kathy Kress as a family favorite.
Ingredients:
• 2 cups flour
• 2 teaspoons baking soda
• 2 teaspoons ground cinnamon
• 3/4 cup vegetable oil
• 1/2 teaspoon salt
• 1 1/4 cups sugar
• 1/2 teaspoon vanilla
• 3 eggs
• 2 cups diced mango
• 1/2 cup chopped pecans or walnuts (optional)
Directions:
Sift dry ingredients into a mixing bowl. Make a well and add remaining ingredients. Mix until well blended. Pour into a greased and floured 9 x 5 x 3 inch loaf pan and let stand 20 minutes. Bake at 350° for about 1 hour, or until a wooden pick or cake tester inserted in center comes out clean.
