Easter Beach Brunch recipes

Celebrating Easter in Coronado Panama? here are some Easter brunch ideas and recipes to enjoy with family and friends.

Each year Easter weekend brings people out to the beaches and interior to celebrate the holiday. Just because it’s an annual exodus doesn’t mean the meals you serve need to be the same! Spice up Easter brunch this year with these recipes. 

An easy drink to serve as guests arrive, are Mimosas.  A Mimosa cocktail is composed of one part champagne (or other sparkling wine) and one part orange juice served in a tall champagne flute. 

 Another favorite is a Bloody Mary (or Caesar which is made with Clamato juice, available at most grocery stores). The classic recipe would be: 

    1/4 cup (2 ounces) tomato juice. (or Clamato for the Caesar)
    3 tablespoons (1 1/2 ounces) vodka.
    1 teaspoon Worcestershire sauce.
    3/4 teaspoon freshly grated horseradish.
    3 dashes hot pepper sauce, such as Tabasco.
    1 pinch salt.
    1 dash freshly ground black pepper.
    About 1 cup ice cubes.

Classic dishes such as french toast, crepes which can be garnished from bananas to smoked salmon, breakfast casseroles, hash browns, quiches, waffles, fresh fruit, cheese platter and coffee cakes made a great selection.  

Try a Hash Brown Casserole 

    1 (2 pound) package frozen hash brown potatoes, thawed
    1/2 cup melted butter
    1 (10.75 ounce) can condensed cream of chicken soup
    1 (8 ounce) container sour cream
    1/2 cup chopped onions
    2 cups shredded Cheddar cheese
    1 teaspoon salt
    1/4 teaspoon ground black pepper
    2 cups crushed cornflakes cereal
    1/4 cup melted butter

In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, Cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish.

In a medium saucepan over medium heat, saute cornflakes in 1/4 cup melted butter, and sprinkle the mixture over the top of the casserole.
Bake covered in preheated oven for 40 minutes.
